Experiment Cuban Smoked Pork Butt

With privileges come responsibilities, like ea...Image via WikipediaI decided this weekend I didn't want to do the tradition smoked butt. We have a friend who shared a wonderful recipe for Cuban Black Beans with us several years ago. This recipe inspired me to have a Cuban themed Labor Day menu that will consist of Cuban Smoked Pork Butt, Cuban Black Beans and Saffron Yellow Rice.

When I decided my menu I did a little research on-line and could not find very much info on Cuban Smoked Butt so I decided to experiment on my own. I made a Mojo Marinade as well as a dry rub. The Mojo Marinade consisted of making a Sour Orange Juice, garlic, peppercorns, oregano and salt. I let the pork marinate 24 hours in the Mojo. The next day I removed from the Mojo and applied a dry rub I made using Adobe seasoning, oregano and brown sugar and let this marinate overnight.

We are firing up the smoker now and anxious to see how this turns out. I will keep you posted and I will publish the recipes if this is experiment is successful!
